A contact grill (also known as a 'Clamshell' grill) achieves its results by cooking food between two heated surfaces. This method has many benefits over the conventional griddle; it cooks much more quickly, seals the food more effectively and locks in more of the juices thus improving the flavour and reducing shrinkage.
The speed of the cooking means that a relatively small cooking area can triple the output of a griddle of the same size. Generally, cooking times range from one minute to around three minutes depending on the food type and thickness.
The cooking cycle
Contact cooking is easy, there are five simple steps in the process.
- Place food on to the bottom plate.
- Lower the top plate onto the food
- Set the timer (if your grill has one) for desired time
- When the cooking time has elapsed open the top plate.
- Remove the food and wipe or scrape the plates to remove food residue.

These times are given as a general guide, using an Express contact grill. Other grills may be more limited in the range of food that they can cook.
